Jackfruit “Pulled Pork” Tacos
Ingredients
- 2 cans 20 oz each young green jackfruit in brine, drained and rinsed
- 1 tbsp olive oil
- 1 small onion diced
- 2 cloves garlic minced
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 1/2 tsp chili powder
- 1/4 cup barbecue sauce
- 1/4 cup water
- Salt to taste
- 8 small corn tortillas
- 1 cup shredded purple cabbage
- 1 avocado sliced
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions
- Shred jackfruit using two forks to pull apart the pieces.
- Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes.
- Add garlic, smoked paprika, cumin, and chili powder. Cook for 1 minute until fragrant.
- Add shredded jackfruit, barbecue sauce, and water. Simmer for 15-20 minutes until jackfruit is tender and sauce has thickened.
- Warm corn tortillas according to package instructions.
- Assemble tacos: Fill each tortilla with jackfruit mixture, top with shredded cab
