Jackfruit "Pulled Pork" Tacos

Ingredients
  

  • 2 cans 20 oz each young green jackfruit in brine, drained and rinsed
  • 1 tbsp olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • 1/4 cup barbecue sauce
  • 1/4 cup water
  • Salt to taste
  • 8 small corn tortillas
  • 1 cup shredded purple cabbage
  • 1 avocado sliced
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions
 

  • Shred jackfruit using two forks to pull apart the pieces.
  • Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes.
  • Add garlic, smoked paprika, cumin, and chili powder. Cook for 1 minute until fragrant.
  • Add shredded jackfruit, barbecue sauce, and water. Simmer for 15-20 minutes until jackfruit is tender and sauce has thickened.
  • Warm corn tortillas according to package instructions.
  • Assemble tacos: Fill each tortilla with jackfruit mixture, top with shredded cab
