20 oz each young green jackfruit in brine, drained and rinsed

olive oil

small onion
diced

garlic

smoked paprika

barbecue sauce

cup
water
Salt to taste

small corn tortillas

shredded purple cabbage

Instructions
Shred jackfruit using two forks to pull apart the pieces.
Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes.
Add garlic, smoked paprika, cumin, and chili powder. Cook for 1 minute until fragrant.
Add shredded jackfruit, barbecue sauce, and water. Simmer for 15-20 minutes until jackfruit is tender and sauce has thickened.
Warm corn tortillas according to package instructions.
Assemble tacos: Fill each tortilla with jackfruit mixture, top with shredded cab
