Spicy Black Bean and Corn Chowder
Ingredients
- 2 tbsp olive oil
- 1 large onion diced
- 1 red bell pepper diced
- 2 jalapeños seeded and minced
- 3 cloves garlic minced
- 2 tsp ground cumin
- 1 tsp chili powder
- 3 cans 15 oz each black beans, drained and rinsed
- 3 cups corn kernels fresh, frozen, or canned
- 4 cups vegetable broth
- 1 can 14.5 oz diced tomatoes
- 1 cup heavy cream
- Juice of 1 lime
- Salt and pepper to taste
- Chopped cilantro for garnish
- Sliced avocado for serving (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add onion, bell pepper, and jalapeños. Cook until softened, about 5 minutes.
- Add garlic, cumin, and chili powder. Cook for another minute until fragrant.
- Add black beans, corn, vegetable broth, and diced tomatoes. Bring to a boil, then reduce heat and simmer for 20 minutes.
- Use an immersion blender to partially blend the soup, leaving some whole beans and corn for texture. Alternatively, blend about 1/3 of the soup in a regular blender and return to the pot.
- Stir in heavy cream and lime juice. Simmer for an additional 5 minutes.
- Season with salt and pepper to taste.
- Serve hot, garnished with cilantro and sliced avocado if desired.
