- 1 pork tenderloin about 1 lb
- 2 tbsp olive oil
- 2 cloves garlic minced
- 1 tbsp fresh rosemary chopped
- 1 tbsp fresh thyme chopped
- 1 tbsp fresh sage chopped
- 1 tsp Dijon mustard
- Salt and pepper to taste
- 1 tbsp vegetable oil for searing
Instructions
- Preheat oven to 400°F (200°C).
- Mix olive oil, garlic, herbs, Dijon mustard, salt, and pepper in a small bowl.
- Rub the herb mixture all over the pork tenderloin.
- Heat vegetable oil in an oven-safe skillet over medium-high heat.
- Sear the pork for 2-3 minutes on each side until browned.
- Transfer the skillet with the pork to the preheated oven.
- Roast for 20-25 minutes or until internal temperature reaches 145°F (63°C).
- Let rest for 5 minutes before slicing and serving.
