Herb-Crusted Pork Tenderloin

Ingredients
  

  • 1 pork tenderloin about 1 lb
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tbsp fresh rosemary chopped
  • 1 tbsp fresh thyme chopped
  • 1 tbsp fresh sage chopped
  • 1 tsp Dijon mustard
  • Salt and pepper to taste
  • 1 tbsp vegetable oil for searing

Instructions
 

  • Preheat oven to 400°F (200°C).
  • Mix olive oil, garlic, herbs, Dijon mustard, salt, and pepper in a small bowl.
  • Rub the herb mixture all over the pork tenderloin.
  • Heat vegetable oil in an oven-safe skillet over medium-high heat.
  • Sear the pork for 2-3 minutes on each side until browned.
  • Transfer the skillet with the pork to the preheated oven.
  • Roast for 20-25 minutes or until internal temperature reaches 145°F (63°C).
  • Let rest for 5 minutes before slicing and serving.
