Better-For-You Meatloaf Recipe
Ingredients
For the Meatloaf:
- 2 pounds lean ground beef 90/10
- 1 cup quick-cooking oats
- 1 onion finely diced
- 2 carrots grated
- 2 celery stalks finely diced
- 2 eggs
- 1/2 cup milk
- 2 tablespoons Worcestershire sauce
- 1 tablespoon garlic powder
- 1 teaspoon black pepper
- 1 teaspoon salt
For the Glaze:
- 1/2 cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon yellow mustard
- 1 teaspoon Worcestershire sauce
Instructions
- Preheat oven to 375°F. Line loaf pan with foil or parchment.
- Combine all meatloaf ingredients in large bowl, mix well with hands.
- Transfer mixture to loaf pan, shape into even loaf.
- Mix glaze ingredients in small bowl.
- Spread half of glaze over meatloaf.
- Bake 1 hour and 15 minutes, then spread remaining glaze.
- Bake additional 10-15 minutes until internal temperature reaches 160°F.
- Let rest 5 minutes before slicing.
