Better-For-You Meatloaf Recipe

Ingredients
  

For the Meatloaf:

  • 2 pounds lean ground beef 90/10
  • 1 cup quick-cooking oats
  • 1 onion finely diced
  • 2 carrots grated
  • 2 celery stalks finely diced
  • 2 eggs
  • 1/2 cup milk
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon garlic powder
  • 1 teaspoon black pepper
  • 1 teaspoon salt

For the Glaze:

  • 1/2 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon yellow mustard
  • 1 teaspoon Worcestershire sauce

Instructions
 

  • Preheat oven to 375°F. Line loaf pan with foil or parchment.
  • Combine all meatloaf ingredients in large bowl, mix well with hands.
  • Transfer mixture to loaf pan, shape into even loaf.
  • Mix glaze ingredients in small bowl.
  • Spread half of glaze over meatloaf.
  • Bake 1 hour and 15 minutes, then spread remaining glaze.
  • Bake additional 10-15 minutes until internal temperature reaches 160°F.
  • Let rest 5 minutes before slicing.
