Ingredients
- 4 cod fillets 6 oz each
- 2 cups cherry tomatoes halved
- 2 tbsp capers drained
- 2 cloves garlic minced
- 2 tbsp olive oil
- 1 lemon juiced
- 1 tsp dried oregano
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions
- Preheat oven to 400°F (200°C).
- In a baking dish, combine cherry tomatoes, capers, garlic, 1 tbsp olive oil, half the lemon juice, oregano, salt, and pepper.
- Place cod fillets on top of the tomato mixture.
- Drizzle remaining olive oil and lemon juice over the fish.
- Season fish with additional salt and pepper.
- Bake for 15-20 minutes, or until fish flakes easily with a fork.
- Garnish with fresh basil leaves before serving.
