Baked Cod with Tomatoes and Capers

Ingredients
  

  • 4 cod fillets 6 oz each
  • 2 cups cherry tomatoes halved
  • 2 tbsp capers drained
  • 2 cloves garlic minced
  • 2 tbsp olive oil
  • 1 lemon juiced
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions
 

  • Preheat oven to 400°F (200°C).
  • In a baking dish, combine cherry tomatoes, capers, garlic, 1 tbsp olive oil, half the lemon juice, oregano, salt, and pepper.
  • Place cod fillets on top of the tomato mixture.
  • Drizzle remaining olive oil and lemon juice over the fish.
  • Season fish with additional salt and pepper.
  • Bake for 15-20 minutes, or until fish flakes easily with a fork.
  • Garnish with fresh basil leaves before serving.
