Turkey and Vegetable Stir-Fry

Ingredients
  

  • 1 lb ground turkey
  • 2 cups mixed vegetables bell peppers, broccoli, carrots
  • 2 cloves garlic minced
  • 1 tbsp ginger grated
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 2 tbsp vegetable oil
  • Salt and pepper to taste
  • 2 green onions sliced (for garnish)

Instructions
 

  • Heat vegetable oil in a large wok or skillet over medium-high heat.
  • Add ground turkey and cook until browned, about 5-7 minutes.
  • Add minced garlic and grated ginger, cook for 1 minute until fragrant.
  • Add mixed vegetables and stir-fry for 3-4 minutes until crisp-tender.
  • Pour in soy sauce and sesame oil, toss to combine.
  • Season with salt and pepper to taste.
  • Garnish with sliced green onions before serving.
