Healthier Shepherd's Pie Recipe

Ingredients
  

For the Potato Topping:

  • 2.5 pounds potatoes peeled and cubed
  • 1/4 cup low-fat milk
  • 2 tablespoons butter
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

For the Filling:

  • 2 pounds lean ground turkey
  • 1 large onion diced
  • 3 carrots diced
  • 2 celery stalks diced
  • 2 cloves garlic minced
  • 1 cup frozen peas
  • 1 can reduced-sodium chicken broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon black pepper
  • Salt to taste

Instructions
 

  • Preheat oven to 400F
  • Boil potatoes until tender, about 12 minutes.
  • Meanwhile, brown turkey in large skillet, drain excess fat.
  • Add vegetables (except peas) to turkey, cook until softened.
  • Stir in broth, tomato paste, Worcestershire sauce, and seasonings.
  • Add peas, simmer until thickened.
  • Mash potatoes with milk, butter, and seasonings.
  • Transfer meat mixture to baking dish.
  • Top with mashed potatoes, create peaks with fork.
  • Bake 20 minutes until golden.
