  • 2 boneless skinless chicken breasts
  • 1 large cucumber chopped
  • 2 cups cherry tomatoes halved
  • 1 red onion thinly sliced
  • 1 cup Kalamata olives
  • 4 oz feta cheese crumbled
  • 1 head romaine lettuce chopped

For the dressing:

  • 1/4 cup extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions
 

  • Season chicken with salt and pepper. Grill for 6-7 minutes per side until cooked through. Let rest, then slice.
  • In a large bowl, combine cucumber, tomatoes, onion, olives, and lettuce.
  • Whisk together dressing ingredients in a small bowl.
  • Add sliced chicken and feta to the salad.
  • Drizzle with dressing and toss gently to combine.
  • Serve immediately.
