Ingredients
  

  • 2 large sweet potatoes peeled and sliced into 1/2-inch rounds
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 4 oz goat cheese softened
  • 2 tablespoons honey
  • 1/4 cup chopped fresh chives
  • 1/4 cup chopped toasted walnuts
  • 1/2 teaspoon fresh thyme leaves
  • Pinch of red pepper flakes optional

Instructions
 

  • Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper.
  • Pat sweet potato rounds dry with paper towels.
  • In a large bowl, toss sweet potato rounds with olive oil, salt, pepper, and garlic powder.
  • Arrange in single layer on prepared baking sheet, ensuring pieces don't overlap.
  • Roast for 20-25 minutes, flipping halfway through, until tender and lightly caramelized.
  • Meanwhile, mix softened goat cheese with honey in a small bowl until smooth.
  • Remove sweet potatoes from oven and let cool for 5 minutes.
  • Top each round with a dollop of honey goat cheese mixture.
  • Sprinkle with chopped chives, walnuts, thyme, and red pepper flakes if using.
  • Serve immediately while warm.
