If dates are not already pitted, carefully slice lengthwise and remove pits.
Gently open each date to create a pocket for filling.
If almond butter is thick, warm it slightly in microwave for 15-20 seconds to make it easier to spread.
Using a small spoon, fill each date with about 1 teaspoon of almond butter.
Sprinkle chopped almonds over the almond butter filling.
If using chocolate chips, press a few into the almond butter.
Lightly dust with cinnamon and coconut if desired.
Sprinkle with a tiny pinch of sea salt on each date.
Drizzle with honey if using for extra sweetness.
Arrange on serving platter and serve immediately.
Store covered in refrigerator for up to 5 days.
Let come to room temperature for 10 minutes before serving if chilled.
