Almond Butter Stuffed Dates

Ingredients
  

  • 12 large Medjool dates pitted
  • 1/4 cup natural almond butter
  • 1/4 cup chopped toasted almonds
  • 2 tablespoons mini dark chocolate chips optional
  • 1 tablespoon unsweetened shredded coconut optional
  • 1/2 teaspoon cinnamon optional
  • Pinch of sea salt
  • 1 tablespoon honey optional, for drizzling

Instructions
 

  • If dates are not already pitted, carefully slice lengthwise and remove pits.
  • Gently open each date to create a pocket for filling.
  • If almond butter is thick, warm it slightly in microwave for 15-20 seconds to make it easier to spread.
  • Using a small spoon, fill each date with about 1 teaspoon of almond butter.
  • Sprinkle chopped almonds over the almond butter filling.
  • If using chocolate chips, press a few into the almond butter.
  • Lightly dust with cinnamon and coconut if desired.
  • Sprinkle with a tiny pinch of sea salt on each date.
  • Drizzle with honey if using for extra sweetness.
  • Arrange on serving platter and serve immediately.
  • Store covered in refrigerator for up to 5 days.
  • Let come to room temperature for 10 minutes before serving if chilled.
