Ingredients
  

  • 2 cups plain Greek yogurt full-fat or 2%
  • 3 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup mixed fresh berries blueberries, raspberries, chopped strawberries
  • 1/4 cup chopped almonds or pistachios
  • 2 tablespoons mini dark chocolate chips
  • 1 tablespoon chia seeds optional
  • 1 tablespoon shredded coconut unsweetened, optional

Instructions
 

  • Line an 8x8 inch baking pan with parchment paper, leaving overhang for easy removal.
  • In a medium bowl, whisk together Greek yogurt, honey, and vanilla extract until smooth and well combined.
  • Pour yogurt mixture into prepared pan and spread evenly with a spatula.
  • Sprinkle fresh berries evenly over the yogurt surface, gently pressing them in slightly.
  • Add chopped nuts, chocolate chips, chia seeds, and coconut, distributing evenly.
  • Gently press toppings into yogurt surface so they adhere well.
  • Cover tightly with plastic wrap or aluminum foil.
  • Freeze for at least 3 hours or until completely firm.
  • Remove from freezer and let sit for 5 minutes to soften slightly.
  • Using parchment overhang, lift bark from pan and place on cutting board.
  • Using a sharp knife, cut into irregular pieces or uniform squares.
  • Serve immediately or store in freezer in airtight container for up to 1 month.
